Warm bacon spinach salad

Hard boil and slice 3 eggs.
Fry 6 pieces bacon until crispy and remove to paper towel.
Reserve 3 Tbsp grease in separate dish.
Fry one red onion in bacon grease until caramelized, remove. Fry 1 carton mushrooms in remaining juices until nice and brown. Add 3 Tbsp red wine vinegar to reserved grease, mix in 2 tsp sugar, 1 tsp dijon mustard and dash of salt. Warm if necessary.

Toss 8 oz (3 large handfuls) of fresh spinach with mushrooms, onions, boiled eggs and salad dressing. Serve warm.

Ceasar Salad

1 Head Romaine Lettuce - washed and rough chopped
5 hard boiled eggs
1/2 box whole wheat seasoned croutons (or homemade)
shredded Parmesan cheese

Dressing:
2 Tbsp lemon juice (juice of 1 lemon)
2 1/2 Tbsp mayonnaise
1/4 tsp Worcestershire
4 cloves garlic - minced fine
1/4 tsp salt
1/4 tsp fresh ground pepper

Whisk all together. Drizzle oil over lettuce and toss, drizzle dressing over lettuce and toss, add croutons and eggs and toss . . . sprinkle with parmesan, black pepper and salt and serve.

Fiesta Salad with Honey Mustard Dressing

1 head romaine lettuce, rough chopped or torn
1/4 c. pine nuts or sunflower seeds
2 large red bell peppers, diced
1 can corn (or 3 cobs, cooked and cut)
1/2 lb tomatoes, diced

Dressing:
1 Tbsp honey
1 Tbsp mustard (Dijon is best)
1/4 c. mayo
1 Tbsp white wine vinegar
3 Tbsp sunflower oil
1 1/2 tsp lemon juice
2 dash garlic salt
5 dash curry
2 dash cayenne
2 dash paprika
3 dash black pepper

Fresh parsley garnish

Corn, Bean & Cucumber Salad

1 can beans (I used kidney, but black would be good too)
1 can corn (or 3 cobs worth cooked and cut)
1 large cucumber diced small
1 large tomato seeded and diced
2 large avocados
sour cream
2 cloves garlic minced
1/4 c. cilantro (or more)
2 Tbsp olive oil
juice of 1 lime
1/2 tsp cumin
1/2 tsp salt


Toss all in a large bowl. Serve in a taco bowl with avocados and sour cream.

Broccoli Bacon Salad

2 large heads broccoli - cut or torn to bite sized pieces
1/4 c. red onion (this is ample, they are strong)
6 Tbsp raisins
1/2 c. mayo
1/2 c. sour cream
1/2 package bacon, cooked crispy and crumbled
1 clove garlic, minced
2 tsp cider vinegar
1 tsp sugar (optional)

Mix mayo, sour cream, garlic, vinegar and sugar until smooth. Toss onion, raisins, broccoli and bacon in dressing and serve cold.

Orange Won-Ton Salad

Lettuce
Sesame Seeds
Almonds
Mandarin Oranges
Fried Won-ton strips

Dressing:

8 green onions
1 tsp salt, pepper
1 c. olive oil
1/2 c. sugar
3/4 c. rice vinegar

Blend in blender and toss with salad.

Asian Salad

1 package cole slaw or 1 lb shredded cabbage
1/3 c. toasted sliced almonds
6 Tbsp toasted sesame seeds
2 packages ramen noodles, crushed
green onions
2/3 c. olive oil
3 Tbsp sugar
6 Tbsp rice vinegar
salt and pepper to taste

Toss dry ingredients. mix last 4 ingredients and toss with salad. Serve immediately.

Leftovers aren't good!

Toni's Taco Salad

2 cans black beans, drained & rinsed
1 large onion diced
1 can corn, drained
2 large tomatoes, diced
1 large bag tortilla chips
1 lb lettuce mix
1/2 lb sharp cheddar cheese, shredded
1 can sliced olives
1 tub sour cream
1/2 cup salsa

Combine beans, corn, tomatoes and olives in large bowl. Mix 1 c. sour cream and 1/2 c. salsa for dressing. Break up chips on plate and top with heaping handful of lettuce. Spoon bean mixture over and top with cheese and dressing.

Cranberry Spinach Salad


1 Tbsp butter
3/4 c. almonds

Toast almonds in butter until warm and golden.

Mix for dressing:
1 Tbsp sesame seeds
1 Tbsp poppy seeds
2 tsp minced red onion
1/4 tsp paprika
1/4 c. vinegar
1/4 c. olive oil

Toss 1 lb spinach and 1 c. dried cranberries with almonds and dressing.
